Slow cooker breakfast casserole (also known as Crockpot hashbrown casserole) is one of the easiest and filling breakfast recipes I know how to make. It’s also really flexible in terms of prep time and cooking time. You can also tweak the ingredients to include your family’s favorite breakfast options.

If you’re looking for an overnight Crockpot breakfast casserole, use this recipe and cook it on LOW. I highly recommend cooking it on low so the edges don’t get overcooked before the middle.

If you cook it on LOW, you can cook it overnight. Just be prepared to check on it a bit early so it isn’t overcooked!

SLOW COOKER HASHBROWN CASSEROLE TIPS

I have a few tips on which products to choose when you’re making this recipe. But the great part about it is that you can use your favorites too!

HASHBROWNS
I recommend using shredded hashbrowns over the diced. The diced work fine, but I just like how the shredded work in terms of texture. The brand doesn’t matter either, I’ve just always used the Simply Potatoes brand so it’s a bit of a tradition for me.

SAUSAGE, BACON, OR HAM?
I’m a huge fan of bacon and it’s delicious in this recipe. But my kids prefer sausage so it’s what I usually use. You can use any breakfast meat that you like!

EGGS
If you don’t want to use regular eggs, this recipe does work with egg substitute!

CHEESE
Any kind of cheese works in this recipe. I most often use cheddar, but I’ve also used mozzarella, Colby, and Monterey jack!

You can also add your favorite veggies. I love adding chopped red, orange, and green peppers but right now my kids won’t touch it with the peppers. I also love diced onions! So depending on your audience, add your favorites!

SLOW COOKER SIZE AND EASY CLEAN UP

For this recipe I always use my 6 QT Crockpot. I highly recommend using slow cooker liners for easy cleanup. If you’re making this recipe during the busy holiday season, you don’t want to spend more time cleaning up than you have to!

Crockpot Breakfast Casserole

This dump and go recipe is a perfect make-ahead breakfast recipe for family get-togethers or meal planning! From hashbrowns to sausage, it has everything that we love to eat with our eggs!

Instructions

  • Spray the Crockpot with non-stick cooking spray or use a slow cooker liner.

  • Pourthe bag of hashbrowns into the bottom of the slow cooker.

  • Brown and crumble your breakfast sausage (or use precooked) and layer on top of the hash browns.

  • Whisk eggs together with milk and pour over the hash browns and sausage. Season with salt and pepper, as desired.

  • Top with shredded cheddar cheese.

  • Cook on HIGH for 3-4 hours (or 7-8 hours on LOW) or until cheese is melted and eggs are set.

Notes

Be sure to check that middle of the casserole is set before serving. This egg bake can be made 2-3 days in advance.

DO I HAVE TO USE FROZEN HASHBROWNS?

No, you do not. Just be aware that if you use defrosted hashbrowns, the casserole will cook more quickly.

CAN I MAKE CROCKPOT BREAKFAST CASSEROLE AHEAD OF TIME?

Absolutely! The best thing about this recipe is that it can be made ahead of time. You can put it together and even bake it before putting it into the refrigerator. It will keep in the fridge for about 3 days.

You can also assemble it ahead of time and cook it when you’re ready. Simply put all of the ingredients in the Crockpot and then put the crock in the refrigerator overnight. Then cook it when you’re ready!

HOW WILL I KNOW WHEN THE EGG CASSEROLE IS DONE?

The casserole should be golden brown on the edges. The eggs should also look firm and like they have set up. You can also check the temperature with a food thermometer. You want the temperature to reach 160° F.

HOW TO STORE CROCKPOT EGG CASSEROLE

You can keep this casserole in the refrigerator for 3-5 days, although I usually limit it to three days. If keeping it for a few days, it works best to put servings in individual containers.

HOW TO REHEAT LEFTOVERS

If you’ve stored the casserole in individual portions, it reheats well in the microwave. Just sprinkle with a bit of water before heating so it doesn’t dry out.

CAN THIS SLOW COOKER BREAKFAST CASSEROLE BE FROZEN?

Once the casserole has been cooked, you can freeze it. Be sure to let it cool completely before putting it into the freezer. I recommend splitting it into individual portions or at least dividing it into smaller portions before freezing.

It makes it easier to store and reheat.
